Matouk’s Calypso Hot Sauce has a truly unique flavour which is inspired by the rhythm of Caribbean music. Calypso rhythms can be traced back to the arrival of the first African slaves brought to work in the sugar plantations of Trinidad.
Forbidden to talk to each other, and robbed of all links to family and home, the African slaves began to sing songs. They used calypso, which can be traced back to West African kaiso, as a means of communication and to mock the slave masters. These songs helped to unite the slaves and so ingrained a rich culture and tradition among the people of the Caribbean.
Ingredients:Â Aged Pickled Scotch Bonnet Peppers, Water, Salt, Modified Corn Starch, Vinegar, Onion Powder, Mustard, Potassium Sorbate, Soybean Oil, Spices, Xanthan Gum, and Colour.

Born in Trinidad, the country of origin of Matouk’s West Indian Sauces, this is my go-to hot sauce. All their flavours, like this Calypso blend, are delicious with the right amount of heat and West Indian unique taste. I use it in just about everything, from soups to steak.
